
Chorizo Stew
Ingredients:
(Serves 2)
- 180g chorizo
- 1 onion
- 4 garlic cloves
- 2 carrots
- 1 large potato
- 2 red bell peppers
- 400g tinned tomatoes
- 1 tbsp Tomato paste
- 1 tbsp Worcestershire sauce
- 1 tbsp Apple cider vinegar
- 600ml chicken stock
- 1 bayleaf
- 1 sprig of fresh thyme
- 2 tbsp Blendship All Purpose
- 1 tsp Blendship Salt, Pepper, Garlic
- 1 tsp Blendship Spicy Fajita Seasoning
- Fresh parsley (garnish)
- Optional: bread and butter on the side
Instructions:
- First chop the chorizo into large chunks and place into a large pan that's cold. Place the pan on the hob on low/medium heat and cook until the fat renders out of the chorizo and it crisps up a little.
- Remove the chorizo and set aside. Chop all the veg into chunks and cook in the pan the chorizo cooked in for 5-10 minutes.
- Add the Blendship seasonings and thyme, cook for 30 seconds. Add the tomato paste and finely chopped garlic - cook for a further 30 seconds.
- Add the tinned tomatoes, stock, bayleaf, Worcestershire sauce, apple cider vinegar and the chorizo back in.
- Simmer with the lid on for 1 hour on a low heat. Remove the bayleaf before serving. Serve up and enjoy!
