Chorizo Stew

Ingredients:

(Serves 2)

Instructions:

  1. First chop the chorizo into large chunks and place into a large pan that's cold. Place the pan on the hob on low/medium heat and cook until the fat renders out of the chorizo and it crisps up a little.
  2. Remove the chorizo and set aside. Chop all the veg into chunks and cook in the pan the chorizo cooked in for 5-10 minutes.
  3. Add the Blendship seasonings and thyme, cook for 30 seconds. Add the tomato paste and finely chopped garlic - cook for a further 30 seconds.
  4. Add the tinned tomatoes, stock, bayleaf, Worcestershire sauce, apple cider vinegar and the chorizo back in.
  5. Simmer with the lid on for 1 hour on a low heat. Remove the bayleaf before serving. Serve up and enjoy!
